Ingredients

To make this recipe you’ll need below ingredients –

  1. Chicken thighs (trimmed fat) – The basic ingredient for this recipe.
  2. Spice Mixture: Now for the spice mixture we will be using Cumin powder, Paprika powder, Oregano powder, and turmeric powder as well. Now note it, first take 1/2 tablespoons of all of these things and keep them in a pot, and then take another pot containing 1/2 teaspoon of all of the spices mentioned above.
  3. 1 packet of Splenda – It is a substitute for sugar. It provides the same sweetness without the calories of the sugar.
  4. Salt and pepper – You can use it according to your taste.
  5. 1 tbsp of Apple cider vinegar
  6. Red Pepper Flakes (Optional)
  7. Greek Yogurt
  8. Garlic Paste
  9. Olive Oil
  10. Konjac Rice – Many think brown rice is the best for your health. But you’re wrong, and I will prove it at the end of this post.

Chicken Thigh Recipe For Diabetics – Instructions

  1. First of all, put the chicken thighs in a bowl and add a little bit of olive oil to that. Then add salt and pepper to your taste and put the bowl of spices where you kept all the 1/2 tablespoon spices.
  2. Now mix the things well until the chicken is well-coated with the spices.
  3. Now heat your pan to medium-high heat and grease with a little bit of olive oil and place your chicken thighs on that.
  4. Now cook until they are cooked well and a little bit crispy. Cook the chicken until it gets golden brown and a lavish color.
  5. Put the chickens on a plate and chop them casually.
  6. Now again take a pan, and add a little bit of olive oil. Don’t forget to preheat to medium-high heat. Add the chicken thighs to the pan.
  7. Then add the cooked konjac rice to the pan and add the rest of the spices to the rice.
  8. Mix everything very well.
  9. Now for a little bit of extra flavor, add the red pepper flakes to the mixture and mix it well. This is completely optional.
  10. Keep the mixture aside on the stove. Meanwhile, let’s prepare the Greek yogurt sauce. Add the apple cider vinegar, 1 pack of Splenda, 1/2 tbsp of garlic paste, and a pinch of salt. Now mix it well and keep it aside.
  11. Finally, bring out the chicken to a plate and decorate it with the Greek yogurt you just prepared. You can also serve broccoli with feta cheese with it as a side dish. For a bit more taste add a little bit of Saracha sauce on the top of the yogurt because this goes well with the yogurt.
