After the Coconut chicken thighs recipe, this is my first choice because it is super easy to make, takes a little to no time, and tastes great. The lemon pepper that is used in this recipe, brings a sharp, citrusy brightness that cuts through the richness of the chicken thighs.

Also, the lemon pepper doesn’t overpower the whole dish, it amplifies the natural flavors already in the chicken, especially when the chicken is bone-in and skin-on. The bone-in and skin-on chicken thighs take a little bit more time to be cooked properly but trust me, the taste and flavor are much better. Even in this dish, the chicken skin will be crisped up and browned but the flesh inside will be tender and juicy.

You will need the below ingredients to make these amazing chicken thighs recipe:

  1. 2 to 2.5 lbs bone-in and skin-on chicken thighs: These are the main ingredients of the thighs.
  2. 1 Whole lemon juice
  3. 1 tablespoon lemon pepper seasoning
  4. 1/2 tsp paprika
  5. 1/2 tsp Italian seasoning
  6. 1 tsp garlic powder
  7. 1 tsp onion powder
  8. 1 tsp salt
  9. 4 tablespoon butter

  1. First off, put the chicken thighs on a plate and the juice of a whole lemon onto them.
  2. Take a bowl and put the 1 tablespoon lemon pepper seasoning, 1/2 tsp paprika, 1/2 teaspoon Italian seasoning, 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp salt. You can put salt to your own taste, that doesn’t matter.
  3. Now mix all the spices you put in the bowl well.
  4. Now pour the spices on the chicken thighs (both sides) and mix them well. Make sure that the thighs are well-coated with all the spices.
  5. After mixing put a slice of butter on the chicken thighs. These give proper crispiness to the thighs. Make sure to add them to the skin side.
  6. Preheat your oven to 400 F
  7. Place the chicken thighs onto the baking sheet squeeze the lemon juice onto the thighs and let them bake for 45 minutes and enjoy!

Can I use chicken breasts?

If you love chicken breasts, then why not? But mind it, if you use chicken breasts, then you need only 20 to 25 minutes to bake them not 45 minutes. But I think that will decrease the overall taste and quality of this recipe.

Can I store and reheat the leftovers?

Obviously, if you have leftovers, you can store and reheat them to use them. As I had mentioned in my Chicken thigh recipe with ranch dressing, if you want to store them for a short time like 3 to 4 days, put them in the refrigerator or fridge. But if you want to store them for longer times, freeze them. This will store them for 3 months.

Now, for reheating purposes, you can use the oven as it is the best method ever. All you need to do is just preheat your oven to 350 F. Now, place the chicken thighs on a baking sheet, cover them loosely with foil, and then heat them for 15 to 20 minutes.

If you are just bringing it out from the freezer, consider thawing it overnight in the refrigerator before heating it.
