Ultimate Juicy Smoked Chicken Thigh Recipe


If you’ve ever tried smoking chicken thighs and ended up with bland meat, rubbery skin, or even worse: dry and overcooked thighs. These feel like hell, but you’re not alone. For a new cook it’s always tough to get that perfect balance of juicy meat, smoky flavor and shatteringly crispy skin can feel nearly impossible. But don’t worry. Today, in this smoked chicken thigh recipe, I will show you exactly how you can achieve those.

With just four simple ingredients, you’ll finally get the desired thighs that are super tender, juicy, tasty, and obviously have super crispy skin. So, whether you’re a weekend warrior with a backyard smoker or trying this for the first time, you’ll find everything you need in this post.

Ingredients

Here are all the ingredients that you will need to make this delicious and juicy smoked boneless chicken thigh recipe:

  1. 8 boneless skin-on chicken thighs
  2. Chupacabra Cluckalicious Seasoning
  3. Olive oil
  4. BBQ Sauce

That’s all. You just need these 4 ingredients to make this delicious recipe. Once you have that, let’s move on to the next part. Note that I have used the product specifically to get the taste I love. But if you don’t have it or like some other brands, then go for it.

Instruction

Here are all the instructions you will need to make this recipe:

  1. First of all, pat the chicken thighs dry on both sides very well. Now, put them in a rack skin side down and coat them with the cluckalicious seasoning well.
  2. Now, flip them and take a tissue paper and again pat dry the skin side to make sure that the skin is completely dry. Now, coat that side too.
  3. After that, curl the chicken thighs with skin-side up and put them on the barbecue rack.
  4. Heat your smoker to 275°F and put the chicken thighs in that and cook for 1 hour.
  5. Thereafter, increase the temperature to 325°F and cook for another 30 minutes.
  6. After these 30 minutes, coat the chicken thighs with a thin layer of BBQ sauce.
  7. Now again, smoke that at 335F for 20 additional minutes and pull it out. At last, you should see the BBQ sauce caramelized and shining. Also, the chicken should be juicy, and the skin should be super crispy.

Tips For Cooking

I have already given all the essential steps and processes in the instruction part. But here are some super special and mind-blowing tips that will take your recipe quality to a whole other level:

  1. Layer your seasoning for deep flavor: Don’t just coat once. Apply seasoning in two light layers, 10 minutes apart. When the first layer starts to get absorbed into the meat, the second clings better, making the flavor go deeper than skin level. It ensures a more flavorful and tasty recipe.
  2. Add wood chips in stages: Instead of loading up wood chips at once, add them in two or three intervals during the whole cooking process. This gives layers of smoky flavor and prevents overpowering bitterness.
  3. Aim for at least 175°F internal temperature: Whenever I cook chicken thigh lentil recipe, chicken thigh and spinach recipe, coconut chicken thighs recipe, or even recipes like cream of mushroom chicken thighs or whatever, I always check the internal temperature of the chicken thighs before eating or finishing. It is advised that you aim for at least 165F, but for this recipe, I suggest you aim for 175°F at least. This tenderizes the meat as well.
  4. Try A Reverse-sear finish: After smoking, if you want that restaurant-quality feeling, throw the thighs skin-side down on a hot grill for 1 or 2 minutes. As a result, you’ll get that sizzling, crackly skin plus added smoke-kissed grill marks on the skin of the thighs.
  5. Rest the chicken, skin-side up: After cooking, let the chicken thighs rest for 10 minutes after cooking skin-side up. Don’t put the skin side down or the moisture will soften the crispy skin. This optional step incredibly helps juices to redistribute properly and gives you another level of taste.
